INTRODUCTION

Pangkep consist of three dimensions, there are ocean, landing, ridges. Pangkep is a city rich , there are bolu fish (ikan bolu), shrimp (doang) , and orange (lemo). Pangkajene in this time name for discrict that be regency government centre pangkep (regency capital). Discrit of pangkep there are 13.  This discrict is at half south it abuts on district balocci and minasatene, half north it abut on district bungoro,  and half west it abut on district liukang tupabbiring.  Vast this district area 45,339 km2, consist of area expanse rice field, pond and beach area that be the society principal livelihood as farmer, fisherman. part middle this district area is river lengthwise pangkajene that split landing district city area pangkep, borthside the river balocci, minasatene and pangkajene and half south the river pangkajene, bungoro, labakkang, ma'rang, segeri and mandalle. In Pangkep there are many typicall food example sop saudara, cucuru bajao, dange, and cao.

Cao is one of a typically food from Pangkep. The first cao found in the Island. The name of Cao come from China that have meaning small fish in the bottle. This food made from fish. It is pink colour because when the process of the preparation is add colour artificial. Cao would be more delicious if serve with utti batu, cucumber (bonte), rice, and mango. Many people like Cao because imply omega 6^th and omega 12^th and many people dislike this food too because the smell is very wasp and the taste is rather curios. Cao is seldom found among the people, because we always eat food be ready to served example mie instant.. So we must keep cao with extinction and defeated by modern cuisine.

HOW TO PROTECT CAO

To protect cao not only our old people, but be government task  and  we as young people must  participate to maintain and keep it. The government can protect existence Cao with make that purpose rule to keep  cao. Government can also make a program to socialize public of Cao , call the community to keep and protect the presence of Cao, make patent right to cao so that not at claim by city other, then for make cao community can participate in this original recipe bequeathed to the young people to be introduced out of Pangkep,  nasional, and international. The young must participate as the future, keep of cao with extinction and the defeat by modern cuisine. So that did not forget for the next generation.

And for to protect fermentation of cao, we must cloth a bottle with hot water so that fermentation cao produces good fermentation. after that is enclosing a bottle and save to closed room or far with sun, afterwards wait up to 1 week. Cao be ready to served.

So, cao is typically food from Pangkep. And we really need to keep the presence of Cao.
